Speedy no knead bread - 2020-02-13,South Dakota

Just made another. For about 25 cents worth of ingredients and several minutes of hands on time, you are rewarded with a house that smells like a bread bakery and a homemade bread worthy of praise. However, I have a hand mixer- will that suffice? Or do you prefer I do it by hand if I don’t have a Paddle attachment?.

No junk.I base this on two things: texture and flavor. My kids and I made this yesterday.

I’ll post a picture when I’m done.Making a loaf tonight, but don’t have any fresh herbs.About how much dried rosemary and thyme would you say it is?(I always have fresh garlic in the house though!).You can easily find it on the internet.

We’ve had one or two other readers say they needed more flour/less water.Today I finally asked what that incredible smell was.I used Red Kuri Pumpkin from the garden that I steamed first.

That’s awesome! 🙂.Time to bake.Letting a bread rest for 40 hours before slicing would be too hard for me, I’m impressed that you withstand the temptation – 24 hours are already challenging for me 😀In Germany, a lot of whole grain rye breads are baked with cracked rye only and as the cracked rye yields pentosanes to the dough, it needs the acids from the sourdough, too.

Hi Darlene.I am a new bread baker and have a 5 qt cast iron dutch oven that I’m anxious to bake bread in.Cover and let rise at room temperature 2 hours (until 2-3 times in volume).

While there’s no lead in cast iron, simmering an acidic ingredient, such as tomatoes, for a long time can leach out some of the iron molecules making your favorite tomato sauce taste a bit metallic.

If you haven’t read it, you really should. You will need cake and bread flour and a minimum of 24 hours to chill….but SO worth it!.It was too hydrated to get much surface tension into it although I tried.

Did I miss something.Thank you.Great point.

Today, I will make a batch up using whole wheat 1:1 ratio with AP.If this recipe gets a lot more people to try baking their own bread, then it is definitely a baking breakthrough and I celebrate that!.This was almost perfect! For some reason, my bread was slightly undercooked (after 25 mins).

The recipe calls for all-purpose flour, not bread flour!.(Yes, I should have refrigerated after 18.) I followed the remaining instructions (and thanks to many reader comments, too!).Looks delicious, going to try this today :) BTW – I watched The Intern last week (with Anne Hathaway and Robert DeNiro) and noticed that your cookbook is on the counter in their kitchen in the breakfast scenes!!.

Turn dough onto a floured work surface and knead until smooth, 1 to 2 more minutes. Thanks for all of your help.We were only able to add a notation in the video about it but unfortunately, there’s no easy way to edit a published video.

And what to do about your pot is to unscrew the handle And stuff the whole with foil. Here's a link to the full description at the King Arthur Flour site.I doubled the spices called for in the recipe.

Remove your masterpiece from the oven, carefully place it on a cooling rack (I use 2 silicone spatulas) and, while you're admiring your mastery, listen.Blend well after each addition.I’ve been baking bread for 40 years and this method has turned my bread baking upside down.

Is that the norm?.I found the times for raising the dough were quite varied, my first rest was for 25 1/2 hours.

And I was quite pleased with the results. They have excellent reviews and a variety of uses.I knew you’d give these a try! I baked mine just this morning, but made mine smaller, used smaller (and fewer) chips, and left off the salt on the tops.

This pumpkin bread sounds wonderful.Question:can I use a bundt pan instead of loaf pan?Looks like a lot of batter, so wonder if bundt pan would work. This bread is truly idiot proof.I’ve kept mine only covered on the sides for a couple days and it’s crisp on top but not as much.

This is autumn perfection.SO GOOD!~.I had to omit the cloves because I don’t have any and I used self-rising flour (omitting the baking powder and most of the salt).

Probably could have filled 11, a few were “overfull.”.I was using a reprint of the original recipe that had the water and flour both 400 grams.

I simply pull 4 edges up and toward the center. It’s inspiring. This big, beautiful loaf can be made in your own kitchen for less than $1 a loaf.

Should I modify this handy-dandy recipe at all to accommodate it? Thank you for your time (and really great recipes!) Margaret. So delicious!.Perovskia, sorry I missed your question first time around.Yes, in fact, this bread is very good, and almost foolproof.I don't make it so much these days, but the memory lasts :).

Hi Natalie, I would tightly seal the top of the pot with foil. You just want to create an environment that holds the steam in.I poured the dough into a La Creuset pot and baked it per the recipe.I too have a lack of patience for yeasty baking, but on the few occasions that I do get my baking groove on, I am always so satisfied with the result…and this bread, well it looks to dang beautiful and too dang easy not to try.New York Times article on slow rise bread baked in a pot.
