Just made another.For about 25 cents worth of ingredients and several minutes of hands on time, you are rewarded with a house that smells like a bread bakery and a homemade bread worthy of praise.However, I have a hand mixer- will that suffice? Or do you prefer I do it by hand if I don’t have a Paddle attachment?.

Hi Natalie, I would tightly seal the top of the pot with foil.You just want to create an environment that holds the steam in.I poured the dough into a La Creuset pot and baked it per the recipe.I too have a lack of patience for yeasty baking, but on the few occasions that I do get my baking groove on, I am always so satisfied with the result…and this bread, well it looks to dang beautiful and too dang easy not to try.New York Times article on slow rise bread baked in a pot.
